Joseon Ok
The third family has been running the highly historical Joseon Ok restaurant in Euljiro since it first opened its doors in 1937. It is renowned for its sweet-seasoned ribs called Yangnyeom-galbi.
About 100 meters on foot from Euljiro 3-ga Station's Exit 6.
The signboard indicates that it has been a tradition for 70 years, however, even this extends several years. The second floor was renovated and named 'The Oak'.

Yangnyeom-galbi 41,000 won
It is believed that Joseon Ok's yangnyeom-galbi is simply seasoned with sugar, soy sauce, garlic, and sesame oil, excluding green onions and onions, to remove the bad taste. It is grilled over a briquette fire in the same manner as before gas became widely used.
According to other broadcasts, beef ribs that have been partially grilled and partially drained are simmered in a cauldron for 4 to 5 hours. The secret, however, is to allow the beef ribs to ferment in the seasoning for 3 to 4 days.
It was delicious and chewy, but a little overcooked. I'm not sure if the master is still in front of the fire.
Mul-naengmyeon 12,000won
I went with mul-naengmyeon because Joseon Ok serves "pyeongyang" type naengmyeon. There may be preferences, but everyone would like this less salty taste of naengmyeon.
It was presented neatly in a metal bowl, just like the side dishes, and as many of you are already aware, you may enjoy it even more pleasantly by wrapping seasoned ribs in cold noodles.
Bibim-naengmyeon 12,000 won
I further ordered Bibim-naengmyeon, which came with a tiny bowl of soup.
However, because Bibim-naengmyeon has a strong flavor, it would be best to remove some of the hot sauce before mixing.
The second level is advised if you want to meet more contemporary Joseon Ok, such as wine or Korean beef, regardless of whether you prefer an old-fashioned setting. I'd like to emphasize that just one seasoned beef rib will be plenty for two persons if they visit because this Yangnyeom-galbi isn't too tender.
