Modern Shabu House (gwanghwamun store)
If there’s one dish that always comes to mind during the chilly winter months, it’s shabu-shabu. The combination of tender meat, fresh vegetables, and savory broth is the perfect way to warm up on a cold day.
When deciding where to host a year-end celebration with friends, I chose Modern Shabu House (Gwanghwamun, Seoul). Known for its accessibility, luxurious ambiance, and delicious offerings, it seemed like the perfect choice.
Location
Modern Shabu House (Gwanghwamun) is located on the fifth floor of D Tower, just a five-minute walk from Gwanghwamun Subway Station. With additional branches in the Express Bus Terminal, Jamsil, and Yeouido, you have plenty of options. However, the Gwanghwamun branch stands out for its black-toned luxurious décor and breathtaking cityscape views of Gwanghwamun Square.
Interior
At the heart of the restaurant lies a salad bar, stocked with an impressive array of fresh vegetables, mushrooms, rice cakes, and sweet pumpkins.
Menu
For those craving variety, there are nine different broths to choose from, ranging from classics like mushroom broth to more adventurous flavors like coconut curry, tomato, and milky cream.
The all-you-can-eat menu includes:
- Four types of meat
- Fifteen varieties of vegetables
- Rice or noodles
- Unlimited drinks
You can select from Signature, Special, or Premium courses, depending on the cuts of meat and their origin. If you opt for the Special course, you’ll enjoy the highest-quality Hanwoo (Korean beef). The pricing is tiered, with discounts for children and infants.
Each table is equipped with an tablet for convenient browsing and ordering. From broth selection to extra servings of meat, the process is incredibly user-friendly. Drinks, including draft beer, soju, wine, and champagne, can also be ordered through the tablet. If you’re bringing your own wine, the corkage fee is 20,000 won.
A total of 9 types of broth to choose from
Having visited multiple times, I’ve tried several broths, but the mushroom broth remains my favorite. It’s light, savory, and complements the meat and vegetables perfectly. On this visit, I also enjoyed the Yuja Cheongyang broth, which has a refreshing citrusy kick reminiscent of yuzu ramen.
The Yuja Cheongyang broth has a refreshing flavor similar to Yuzu Ramen, so I was able to eat it without becoming greasy.
Broth replacement : 10,000 won
You can switch broths during your meal for an additional charge of 10,000 won, so feel free to explore more than one flavor.
The meal menu changes depending on the broth
The variety of broth types is what makes this place so appealing. The course is completed with rice (risotto) or noodles (ramen/somen/udon/fried noodles) depending on the broth you choose.
Taste
Vegetables and meat are of such high quality that they are guaranteed to be excellent. Enjoy a relaxing and enjoyable meal with the help of friendly staff.
There are four types of mushrooms and a wide range of vegetables that are perfect for shabu-shabu at the salad bar. Furthermore, rice cakes and sweet pumpkins are available.
A total of 4 types of meat are served
The high quality of the ingredients is evident in every bite. The four types of meat are served in a bento-style tray, and you can reorder your favorites as needed. While I usually gravitate toward beef, I was pleasantly surprised by how flavorful the pork was, equally tender and delicious.
Two types of sauces: Soy sauce and Peanut sauce
The staff recommended pairing soy sauce with green onions and peppers and peanut sauce with minced garlic for dipping. These combinations elevated the flavors even further.
The broth boils quickly thanks to the induction heating, making it easy to start eating right away. Add fresh vegetables from the salad bar to the broth, and start with beef for the best flavor experience.
Salad Bar
One standout feature is the robot servers, which occasionally deliver extra meat to your table. It’s a fun touch that adds to the overall dining experience.
Truffle Cream Risotto (from choosing the mushroom broth)
We had roughly ten boxes of meat and three baskets of veggies.
Meals are prepared as soon as you notify the staff. They cooked the risotto with cream and soaked rice at the table, and the heart-shaped truffle oil and parsley powder at the end were so lovely.
Spicy soybean paste broth
When the meal was nearing its end, we decided to switch to a spicy soybean paste broth. This broth pairs beautifully with water parsley and mugwort, creating a mildly spicy and satisfying flavor, perfect for a cold winter day. We completed this course with freshly prepared ramen noodles, which added a comforting, hearty finish.
Strawberry ice-pop (dessert)
The meal concluded with fresh strawberry sherbet, a refreshing and delightful way to cleanse the palate.
Modern Shabu House (Gwanghwamun) exceeds expectations in every way; flavor, ambiance, service, and convenience. While the price is slightly higher than average for shabu-shabu, the quality of the ingredients and the luxurious setting make it well worth the cost.
Whether you’re hosting a celebration, dining with family, or simply looking for a cozy spot to enjoy hot shabu-shabu, Modern Shabu House is an excellent choice.
