
Jeug-seog Udon Jjajang
Right across from the Dongjak Tax Office in Seoul stands a humble little eatery that never sleeps, Jeug-seog Udon Jjajang (Singil, Seoul). It’s open 24 hours a day, always glowing with kitchen steam and the warmth of regulars.
I’m in love with their udon. Thin, chewy noodles bathed in a delicate anchovy-based broth. I stopped by early in the morning to start the day with a bowl.
The interior consists solely of a narrow bar counter seating. A bit worn-out and aged, it speaks to the place’s long-standing history. Even early in the morning, the crowd makes it feel even more snug.
Menu
The menu is refreshingly simple, and the prices? Almost unbelievable in this day and age.
The side dishes are simple. Pickled radish and cubed kimchi (kkakdugi). The mild tang and sweetness of the fermented kimchi pair beautifully with the udon.
Udon 5,000 won
Udon comes topped with seaweed flakes and crunchy tempura bits.
You can ask for extra tempura bits if you like your broth thicker, but honestly, the standard amount strikes the perfect balance.
The broth has a gentle anchovy aroma and rich umami, an incredibly balanced flavor. The fresh noodles, made on the spot, are thin yet delightfully chewy.
If you like a little kick, add a spoonful of chili flakes. The noodles stay springy even after sitting in the broth, a sign of true craftsmanship.
Jjajangmyeon (black bean noodles) 5,000 won
Jjajangmyeon comes with a dash of chili powder on top. Once again, the noodles shine. The warm, savory black bean sauce coats every bite beautifully.
Halfway through, I added more chili flakes for a bit of spice. It really brought the flavor to life.
Located across from the Dongjak Tax Office near Boramae Station, Jeug-seog Udon Jjajang serves handmade noodles pulled to order. The springy texture and subtle anchovy broth come together in a perfectly balanced, umami-rich bowl of udon.
The sweet and savory jjajangmyeon is also incredibly satisfying. For just 10,000 won, you can enjoy two delicious dishes. Truly a happy and filling meal!
